I crave watermelon every summer. It must be a nostalgia thing. But this summer, I’ve been thinking outside the box with recipes. I started to wonder… Are there other ways to eat watermelon than how I usually do?

 

Well, what was supposed to be a quick Google search turned into a deep dive down a rabbit hole. I finally settled on a Mediterranean-style watermelon salad dish that I found on a random Pinterest board. And it was so delicious that I had to share it with our readers!

 

Ingredients:

  • 1/2 large watermelon (or 1 small one)
  • 1 English cucumber (you can use regular cucumber, but I prefer the thin skin on English ones)
  • 1/2 cup feta cheese
  • 1 cup basil leaves
  • 1 cup mint leaves
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil
  • lime juice (lemon would probably suffice as well)
  • kosher salt

 

Instructions:

First, we make the dressing. Honestly, I could eat it without the dressing, but it was so good that I don’t think I’ll ever make this dish again without it.

 

From the recipe list, take your honey, olive oil, and just a pinch of kosher salt and mix it all together. Add just a bit of lime juice, stir, taste, add more and repeat until you get the taste you prefer.

 

Finally, we make the actual watermelon salad. First, you’ll want to peel and cut the watermelon into cubes—probably the most time-consuming part. Once that is finished, put them into your salad bowl.

 

Next, chop the basil and mint leaves into tiny pieces and dice the cucumber. Add them to the salad bowl.

 

Pour your honey-lime dressing on top, gently toss the salad, sprinkle the feta cheese on top… and voilá! You’ve created this interesting, delicious new dish that you’ll likely want to make a summertime tradition! Enjoy!
