Recipe Monday: Pork Marsala

Pork Marsala

  • 3 pork tenderloins
  • All-purpose flour
  • Vegetable oil
  • 2-3 Tb butter
  • 8 oz. or more of sliced mushrooms
  • 3 Tb chopped green onions
  • 3 Tb chopped parsley
  • 2 cups beef broth
  • ½ cup marsala
  • Paprika, salt and pepper to taste


Cut the tenderloins into 1/2 -inch slices; pound the slices lightly. Sprinkle lightly with flour.

Saute tenderloins in a small amount of vegetable oil (or I would use butter) in a skillet over high heat until brown. Remove to a baking dish.

Melt the butter in the skillet and add the mushrooms. Saute for 5 minutes.

Add the remaining ingredients. Pour over the pork and bake at 350 degrees for 30 minutes.

This is great with mashed potatoes or rice and a beautiful Greek salad.

Serves 8
