Who’s on day four of their New Year’s resolutions? 

 

If it’s to eat less sugar and increase fat, then you might be a part of the ketogenic diet craze. Many people have reported success eating that way, and Chef Amanda Ivy has let us steal a recipe that is yes, keto, and yes, delicious. 

 

Keto Cheesecake

Ingredients

Crust:

1.5 cups almond flour

1/3 cup melted butter

1/4 cup brown sugar Swerve 

 

Cheesecake:

24oz cream cheese

3/4 cup granular Swerve 

3 eggs

1 teaspoon vanilla extract

 

Directions

Prepare crust by combining ingredients. Place in ramekins or a pie plate. 

 

For cheesecake:  mix cream cheese, Swerve granular, eggs and vanilla for cheesecake. 

 

If using ramekins: divide among eight ramekins and bake at 350 degrees for 10 minutes and chill.

 

 If baking in a 9-inch pie plate, then bake for 30-45 minutes until set.
