Recipe: Lemon Icebox Pie and Crust



Graham Cracker Crust Recipe



1 ½ cups graham cracker crumbs

¼ cup powdered sugar

3 ounces butter, melted



Mix all ingredients. Press the crust onto the bottom of tart ring (on sheet pan with parchment paper) or in a pie tin. Use the bottom of a measuring cup to pack crumbs tightly.

Bake at 375 degrees for 10 minutes for a crisper crust. 


Lemon Icebox Pie Recipe



2 cans sweetened condensed milk (14oz)

6 egg yolks

1 cup freshly squeezed lemon juice 

2 teaspoons lemon zest (optional)



Scrape condensed milk into a bowl. 

Whisk egg yolks into condensed milk. 

Add lemon juice and zest. 

Pour into graham cracker crust shells. 

Bake at 375 degrees for 10-15 minutes, or until filling is set (will not be browned). 

Chill completely. Top with whipped cream and lemon slices if desired.
